- What was measured
- Muscle buffering capacity and histidine-containing dipeptide content in locomotory muscles of Thoroughbred horses, greyhound dogs and humans.
What the authors reported
Buffering capacity and carnosine content were highest in the horse. Anserine was found only in dog muscle. The authors say the higher buffering capacity of horse and dog muscle compared with human muscle appears to be predominantly due to higher muscle contents of histidine-containing dipeptides.
Limits of this study
Short comparative paper; sample sizes and values are not given in the abstract. Full text not read.
