- What was measured
- Hydrazine content of commercial synthetic carnosine preparations and its interference with assays of aldehydes, malonaldehyde and thiobarbituric acid-reactive substances.
What the authors reported
Hydrazine, a strong reducing agent, was detected and structurally identified in commercial carnosine at 0.01 to 0.20 percent by weight. These levels interfered with analyses of headspace aldehydes, malonaldehyde and TBARS. The authors state that purified carnosine is needed to re-evaluate carnosine's biological and chemical properties.
Limits of this study
Analytical study of reagent purity; relevance to current commercial products is not established. Abstract only.
