Ability of carnosine and other skeletal muscle components to quench unsaturated aldehydic lipid oxidation products

Zhou S, Decker EA.. Journal of Agricultural and Food Chemistry, 1999; 47(1):51-55.

Laboratory studyOther animals

Design
Laboratory study
Dose used in the study
5 mM carnosine against 0.5 mM aldehyde
Duration
1 hour at 40 degrees C, pH 7.4
What was measured
Headspace trans-2-hexenal and 4-hydroxy-2-nonenal (HNE) remaining after incubation with carnosine, its constituent amino acids, other histidine-containing dipeptides, spermine, spermidine, glutathione and thioctic acid.

What the authors reported

Carnosine quenched alpha,beta-monounsaturated aldehydes and HNE more effectively than its constituent amino acids, and at 5 mM reduced headspace trans-2-hexenal (0.5 mM) by 44% after 1 hour. Other histidine-containing dipeptides, spermine and spermidine had similar or slightly lower activity. Glutathione and thioctic acid quenched better, but the authors say their overall contribution is limited by their lower concentration in skeletal muscle.

Limits of this study
